2/3 C toasted shredded coconut (sweetened or unsweetened)
1 C creamy peanut butter (add more as needed)
1/2 C ground flaxseed
1/2 C semi-sweet chocolate chips
1/3 C honey
1 Tbsp chia seeds (optional)
1 tsp vanilla extract
INSTRUCTIONS
Stir everything together. Stir all ingredients together in a large mixing bowl until thoroughly combined.
Chill. Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled. (This will help the mixture stick together more easily.)
