Healthy Pumpkin Muffins

INGREDIENTS

1 small can (15 oz) pumpkin

1/2 cup applesauce

2 large eggs

1 tsp vanilla

1/2 cup brown sugar

1 3/4-2 cups flour

1 tsp baking powder

1/2 tsp baking soda

2 1/2 tsp pumpkin pie spice

1/2 tsp salt
INSTRUCTIONS
- Heat oven to 350 and grease bottom only of muffin cups.
- Combine ingredients.
- Pour into muffin cups and bake until muffins are slightly puffed and golden brown, about 25 minutes.
NOTES
The biggest complaint I’ve heard is that these muffins needed more spice. You might want to be use more than the recommended amount!
