Leinie's Honey Weiss Beer Batter

INGREDIENTS

1 1/4 cups flour

1/4 cup cornstarch

1 tsp salt

1/2 tsp pepper

1 Tbsp canola oil

2 egg yolks, beaten

3/4 - 1 cup Honeyweiss, room temp

2 egg whites, beaten at high speed until stiff peaks form

garlic salt
-
lemon pepper
-
6 lg fish filets or 6-12 small ones

canola oil (~1pint, for frying)
INSTRUCTIONS
- In a large bowl, combine dry ingredients, oil and egg yolks. Stirring constantly, gradually add Honeyweiss. Cover bowl and refrigerate mixture for a minimum of 3 hours.
- Just before frying, fold beaten egg whites into mixture - first a small amount to lighten the mix and then add the remainder.
- Pat fish filets dry in paper towels. Season filets liberally and evenly on both sides with garlic salt and lemon-pepper. Then dip filets into the batter one at a time.
- Fry fish in oil until golden brown on both sides.
