Broccoli & Cheese Frittata Fingers

INGREDIENTS

1/2 Tbsp oil

1 cup grated zucchini

1 cup chopped broccoli

3 medium eggs

1/2 cup grated cheddar cheese

1 tbsp flour

1/2 tsp dried mixed herbs/oregano
INSTRUCTIONS
- Preheat to oven 350F. Grease and line a 8" square baking dish with parchment paper.
- Heat the oil in a frying pan. Add the zucchini and broccoli and fry lightly for 3-4 minutes until the vegetables are soft.
- In a bowl mix the eggs, cheese, flour and herbs together. Add the cooked vegetables and mix until well combined.
- Pour mixture into the lined dish and bake for 15 min.
- Remove from oven and cool before cutting into fingers or squares.
