INSTRUCTIONS

  1. Mix salt/water in a large bucket
  2. Submerge turkey in bucket for 4-6 hours. Keep chilled.
  3. Place a wire rack over a large baking sheet.
  4. Remove turkey from bucket, rinse under cool water, drain, and pat dry with paper towels.
  5. Place turkey on rack and refrigerate for 8 hours, uncovered.
