Tatertot Casserole
INGREDIENTS

1 lb? Ground Beef

1/2 onion, finely chopped

1 can cream of mushroom soup

8 oz sour cream

1/2 Tbsp garlic salt

1/2-1 tsp pepper
-
1-2 handsful shredded parmesan or monterey jack

2-3 Tbsp white wine
-
3 handfuls Chopped Kale

Tater tots, ~28oz
INSTRUCTIONS
- Brown beef on stovetop with onion.
- While meat is cooking, combine cream of mushroom soup and sour cream in a bowl.
- Add garlic salt and pepper to taste.
- Add shredded cheese.
- When meat is almost fully cooked, deglaze the pan with white wine.
- Then add three heaping handfuls of chopped kale to the pan, mix well, and let it simmer/wilt for a few minutes (lower heat a bit).
- Mix meat/kale mixture with soup mixture and pour into a glass baking pan (9x13 works).
- Top with tater tots, cooking uncovered at 375F for about 30 minutes (until tots are cooked).
