INGREDIENTS

1/3 C milk

1 Tbsp butter

1 C sifted cake flour

1/2 tsp salt

1 1/4 tsp baking powder

2 eggs

1 C sugar

1 tsp vanilla
Frosting
-
3 Tbsp butter
-
1/3 C brown sugar
-
2 Tbsp cream
-
1/2 tsp vanilla
-
1/2 to 3/4 cup coconut
INSTRUCTIONS
- Scald milk, add butter and cool to lukewarm
- Sift flour, salt and baking powder together.
- Beat eggs slightly and add sugar gradually, beating constantly until thick and lemon colored.
- Add vanilla.
- Add sifted dry ingredients and milk alternately in small amounts, mixing lightly but thoroughly.
- Pour into greased pan and bake in moderate oven (350F) for 30 minutes.
- Combine ingredients for frosting in the order listed.
- Remove cake from oven, cool for 5 minutes.
- Spread frosting evenly over cake, using 2 forks.
- Place under broiler heat until coconut is delicately browned.
- Makes 1 8-inch cake.
