Gluten-Free Spinach Strata

INGREDIENTS

1 tsp olive oil

1 tsp dijon mustard

1 garlic clove, chopped or minced

8 large eggs

3/4 tsp salt

1/4 tsp black pepper

4 cups baby spinach

4 oz feta cheese, crumbled
INSTRUCTIONS
- Preheat oven to 350
- In med. bowl, combine olive oil through pepper. Whisk 'til blended.
- Lightly grease a glass pie dish or casserole dish. Arrange spinach leaves on bottom of dish, then sprinkle cheese on top.
- Pour the egg mixture over the top and then bake in preheated oven for 35-40 minutes or until eggs have set.
NOTES
Try it with some crispy chopped bacon mixed in or tomato slices on top
