INGREDIENTS
Spices (most important first)

2 tsp cumin

2 tsp paprika

1 tsp allspice

1 tsp turmeric

1 tsp sugar

1/2 tsp coriander

1/2 tsp garlic powder
-
1/4 tsp cinnamon
-
1/4 tsp cardamom
-
1/4 tsp cayenne pepper
Other Ingredients

1.5-2 lbs boneless chicken thighs
-
1/2 C oil (olive or vegetable)

Salt
INSTRUCTIONS
- Stick one corner of a gallon freezer bag into a pint glass.
- Pour in the oil, and add the spices directly on top. Mash up the bag corner a bit to mix the oil/spices.
- Salt the chicken before adding it to the oil/spices
- Add the chicken and knead it a bit to coat on all sides.
- Let marinade for 1-36 hours.
- Roast/Grill/Saute/Air-Fry the chicken.
- Roast: Cover a sheet pan in foil and roast for 10-13 minutes at 450F.
- Grill: Keep thighs whole and cook for 5-7 minutes per side
- Air-Fry: Put marinated chunks in the air fryer for 8 minutes at 400F. Line the fryer tray first.
NOTES
- Can use chicken breasts as well, but thighs are better. Also could do pork tenderloin/chops, but adjust cook time.
- - If roasting/air-frying the chicken, cut it into bite-sized chunks before marinating.
